Baked Pork Tenderloin With Apples

Baked pork tenderloin with apples is a warm, comforting dish that combines savory, juicy pork with the natural sweetness of baked apples. It's a perfect one-pan meal that feels both rustic and refined—ideal for a family dinner or a casual get-together. The tenderloin roasts to perfection while the apples and onions caramelize into a flavorful side right in the same pan.

Ingredients

1.5 to 2 lb pork tenderloin

Salt & black pepper

1 tbsp olive oil

1 tbsp Dijon mustard (optional)

1 tsp garlic powder

1 tsp dried rosemary or thyme

2 large apples (Honeycrisp or Fuji), sliced

1 medium red or yellow onion, sliced

2 tbsp butter

½ cup apple cider or chicken broth

1 tbsp brown sugar (optional, for extra sweetness)

Instructions

Preheat oven to 400°F (200°C).

Season the pork

Pat the tenderloin dry and rub it with olive oil, garlic powder, mustard (if using), rosemary, salt, and pepper.

Sear the pork

In an oven-safe skillet or pan, heat 1 tbsp oil over medium-high heat. Sear the pork on all sides until golden (about 6–8 minutes total). Remove and set aside.

Sauté apples & onions

In the same skillet, melt butter. Add sliced apples and onions. Cook for 3–5 minutes until slightly softened. Add apple cider (or broth) and brown sugar if using. Stir to deglaze the pan.

Bake

Nestle the pork tenderloin back into the pan with the apples and onions. Transfer the whole pan to the oven and bake for 20–25 minutes, or until the pork reaches an internal temp of 145°F.

Rest & serve

Let pork rest for 5–10 minutes before slicing. Serve with the roasted apples, onions, and pan juices.
