Lemon Herb Roasted Chicken
Lemon herb roasted chicken is a simple yet elegant dish, perfect for family dinners or special occasions. With crispy golden skin, juicy meat, and bright notes of lemon, garlic, and fresh herbs, this one-pan wonder is as aromatic as it is satisfying. Pair it with roasted vegetables or buttery potatoes for a classic, cozy meal.
Ingredients
1 whole chicken (3.5–4.5 lbs), giblets removed
Salt & black pepper to taste
2 tbsp olive oil or melted butter
1 lemon, halved
6 garlic cloves, peeled and smashed
1 onion, quartered
A few sprigs of fresh herbs (thyme, rosemary, parsley)
1 tsp dried oregano (optional)
1 tsp paprika (for color)
Instructions
Preheat oven to 425°F (220°C).
Prep the chicken
Pat the chicken dry with paper towels. Season generously inside and out with salt, pepper, and paprika. Stuff the cavity with lemon halves, garlic cloves, onion quarters, and fresh herb sprigs.
Rub with oil & herbs
Drizzle olive oil or butter over the chicken and rub it all over. Sprinkle with oregano and extra herbs if desired.
Roast
Place chicken breast-side up on a rack in a roasting pan or oven-safe skillet. Roast for about 1 hour to 1 hour 15 minutes, or until internal temp reaches 165°F in the thickest part of the thigh.
Rest & serve
Let the chicken rest for 10–15 minutes before carving to lock in juices. Serve with pan drippings or a simple lemon herb gravy.
