Ingredients:
- 2 lbs beef tongue tips
- 1 onion, quartered
- 4 cloves garlic
- 2 bay leaves
- Salt & pepper to taste
- Corn tortillas
- Diced onions, cilantro, and lime wedges for garnish
Instructions:
- Place tongue tips in a large pot with onion, garlic, bay leaves, salt, and pepper. Cover with water.
- Bring to a boil, reduce to simmer, and cook 2–3 hours until tender.
- Remove tongue, peel skin, and chop meat.
- Serve in tortillas topped with onions, cilantro, and lime.
