  • 1 lb diced chicken leg meat
  • 1/3 cup soy sauce
  • 1/4 cup vinegar
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp peppercorns
  • 1 tbsp brown sugar
  • 1/2 cup water


    Instructions:
  1. In a pot, combine all ingredients. Let sit for 15–30 minutes.
  2. Bring to a boil, then reduce to low heat.
  3. Simmer covered for 30–40 minutes until chicken is tender.
  4. Optional: remove lid and simmer 10 more minutes to thicken sauce.
  5. Serve over rice.
2. Spicy Chicken Lettuce Wraps

Ingredients:

  • 1 lb diced chicken leg meat
  • 2 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp sriracha
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • Butter lettuce leaves
  • Chopped green onion & carrots for topping

Instructions:

  1. Sauté chicken in sesame oil until browned.
  2. Add garlic and cook 1 minute.
  3. Stir in hoisin, soy, and sriracha. Cook until sauce thickens.

Ingredients:

  • 1 lb diced chicken leg meat
